On the terroir of Barsac, Doisy-Daëne produces both a great Sauternes wine and a racy and very original dry white Bordeaux, the Château Doisy-Daëne's Grand Vin Sec. A great dry white wine to discover, a beautiful realization of the "pope of white wines of Bordeaux", Denis Dubourdieu, 2015 is unfortunately following his death, the last and one of the best vintages of Denis Dubourdieu on his fields.
As soon as they are mature, a few bunches are taken from each vine in all the parcels of Sauvignon. After a possible phase of pellicular maceration, the slow extraction of the juices is carried out protected from oxidation. The musts of gout are rigorously separated from the musts of press and their clarification is done by natural sedimentation. The fermentation takes place in barrels renewed by fifth. The breeding lasts 8 months on lees regularly resuspended.
Doisy-Daëne's Grand Vin Sec is one of the best dry white wines of Bordeaux. Little brother of the Doisy-Daëne Barsac, it expresses in a different register all the distinction and finesse of this exceptional terroir. With a singular aromatic power, grapefruit and white peach aromas, it develops mineral notes and flavors of pear and spices on the palate. At the same time delicious young and of a big potential of guard (5 to 10 years).
